I'm pretty lazy when it comes to bringing along a dish to a BBQ, I always have the best intentions of 'whipping' up something to take along. I have grand images of myself being a domestic goddess, blissfully spending time in the kitchen lovingly preparing a little something to present to the host in good gesture, but truth is I opt for the 'grab and go' products in the supermarket - usually during a hurried lunch break.
I did however make the effort on the weekend when invited for drinks & a BBQ, here I will share with you my handy "don't bring a thing" healthy & tasty Beetroot & Mint Dip.
So here is what you will need:
2 x Medium fresh beets (I used organic).
3 x Cloves of garlic
1/2 x cup of natural yogurt (I used organic).
1/4 x cup Toasted slithered almonds
1/2 cup of mint
Squeeze of fresh lemon
Place beetroot onto a baking tray. Roast at 180c for 50 min. Set aside to cool. Meanwhile toast almonds under grill until lightly browned.
Peel and roughly chop beetroot.
Add beetroot & garlic to the processor and & process for 10 seconds, then add yoghurt, almond, mint and lemon and process to desired consistency.
There you have it! Fresh homemade dip.
Mix it up - Make it your way try a variation of:
coriander
ground cumin
sour cream
Salt
chilli
Roasted garlic
parsley
Delete the nuts & dairy and serve a vegan & allergy friendly dish
Super easy, super healthy and it looks great!
I love dips like this, because tends to produce bucket loads and can be used for days after in so many ways.
For a colourful canape spoon on dip to fresh cucumber rounds and top with fat reduced fetta
Impress your loved one with a beetroot breakfast in bed...
Use the dip as a spread on wraps, sandwiches or as a filling to homemade ravioli. YUM!
